Rye flour imparts a pleasant flavor, and important nutrition. This flour is a medium rye flour, it is neither light, nor dark. The advantage of a medium rye flour is that it imparts a gentle flavor without overpowering. You may choose to replace one third of the flour in your recipe with rye flour. You can use this flour for rye crepes served with smoked salmon, various types of bread like deli-rye bread with caraway, or the French spice bread with honey.
