Blackstrap molasses is the result of the third boiling of cane juice. It is a source for the nutrients lost in white sugar like iron, magnesium, manganese, calcium, potassium, and chromium (see nutrition facts). Take it straight, or as a sweetener. It has its own characteristic flavor and a slightly bitter note.
