Quinoa can be used like rice, stuffed into chicken or grapeleaves, or used in place of burghul in taboulah.
BASIC RECIPE: Wash the quinoa with water in a strainer as you would rice. Place 2 cups of quinoa and 4 cups of water in a medium sized saucepan, bring to a boil. Reduce to a simmer, cover, and cook until all of the water is absorbed (about 15 minutes). You will know that the quinoa is done when all the grains have turned from white to transparent, and the spiral-like germ has separated.
